SMOKED SALMON & FENNEL PIZZA

Serves four Prep & cooking 30 minutes
- 2 x Coles Giant Delicate White Wraps or 2 x 250g pkts Coles Kitchen Bake At Residence Dough Ball, at room temperature
- 1 lemon
- 1 small fennel, finely shaved, fronds reserved
- 250g spreadable cream cheese
- 150g pkts Coles Tasmanian Chilly Smoked Salmon, torn
1. Preheat the oven to 220°C. Grease 2 baking trays. Place wraps on trays and bake for 7-Eight minutes till golden and crisp. (Alternatively, roll out 1 dough ball on a sheet of baking paper to a 25cm disc. Switch to a baking tray. Repeat with the remaining ball. Bake for 15 minutes or till puffed and golden). Put aside to chill barely.
2. In the meantime, zest the lemon. Lower the lemon in half and juice 1 lemon half. Lower the remaining lemon half into wedges. Mix the fennel and lemon juice in a medium bowl. Season.
3. Unfold the cream cheese evenly over the wraps or pizza bases. High with the fennel combination and smoked salmon. Sprinkle with lemon zest. Season. High with reserved fennel fronds and serve with lemon wedges.
